Energy Balls!
Are you looking for a sweet treat that also nourishes your body and mind? Maybe you're a parent or caregiver that's looking for something new and nutritious to offer your kiddos? You'll want to try these energy balls. They are so easy to make and fun to do with your kids as well.
What you need:
A food processor
2 cups pitted dates
1/2 up almond butter, or your favorite nut butter
3/4 cup whole rolled oats
1/4 cup hemp seeds
1/2 cup shredded coconut
a few dashes of cinnamon (to taste)
a couple dashes of sea salt
It's so easy to make. Literally just throw everything in your food process except the coconut. Pulse until it makes a thick, sticky pasty batter. Then scoop and roll into little 1 inch balls (or the size of your preference). You can use a melon baller or ice cream scooper to scoop into consistent sizes. Roll the balls into the shredded coconut until the ball is coated.
These are such a good snack! Pop one with your coffee in the morning, as some pre-workout fuel, a mid-day snack for the kiddos, a solution to your sugar craving, or a quick pop of energy while out running errands. I love when I have these ready to go in the fridge and Rumi absolutely loves them! He loves pressing the buttons on the food processor, he loves to help roll them into balls and he loves eating them!
Refrigerate in an air-tight container for longer life. They will last up to 2 weeks in the fridge.
