The Chic Pea Crouton
Who LOVES croutons??? Or, really, any kind of bread, prepared any way...that's totally me! Here's a fun way to replace croutons and satisfy that craving for something savory and crunchy...except this is loaded with nutrition, healthy protein and fiber. And, it's all natural, plant-based and so super easy to make!

I call them Chic Pea Croutons, or just roasted chic peas which are great for snacking.
INGREDIENTS:
- 1 can chic peas
- 2 tbsp chopped parsley
- 2 tbsp ghee
- sea salt, pepper, paprika to taste
- 1 tbsp chopped garlic or you can use garlic powder instead
- if you have access to it, the Everyday Seasoning from Trader Joes
- (optional) for a little kick, add some cayenne
INSTRUCTIONS:
- preheat oven to 400 degrees
- wash and drain the chic peas
- add everything in a bowl and mix well so the peas are well coated
- place on a flat baking sheet under parchment paper to prevent any sticking
bake on the top rack for 50-60 minutes until they golden brown and crispy (you will hear them starting to pop towards the end)
- let them cool and then serve on top of salads, veggie bowls or just munch on them
*store dry in an airtight container - will last for 5-7 days
