Coconut Cheezy Kale


I am having so much fun exploring new plant-based recipes and foods. This is one of the newest dishes I created this week, and it is so delicious, and easy to cook, I feel like I can eat it everyday and be happy! I’ve already made it 3 times just this week! I even made some for my meat-eating boyfriend this week and he loved it, he actually said “my body feels loved” afterwards.

It’s super easy to make, with just 4 simple whole-food ingredients. Coconut oil (or spray), dino kale, hemp seeds and nutritional yeast flakes.

Wash and chop the kale; I left mine in big peices. Turn the heat on the stove…wait for the pan to get nice and hot. Then add the coconut oil. I am working towards body fat loss, so I am watching unnecessary calories and fat, so I tend to use olive oil and coconut oi

l used 0 calorie coconut oil spray. You can certianly add actual coconut oil into the pan…the amount you use may depend on how much kale you are cooking. If you are cooking a whole bunch, i’d think you can add 1/2-1 tbsp.

Sautee the kale in the coconut oil. I like to add some cayanne (good for digestion and metabolism) and garlic powder (you can add whole chopped garlic if you want, but garlic powder is quicker). Add the seasonings to taste…i never measure them out. Once the kale starts to turn to a beautifu dark green, and soften, add a tablespoon or so or Bragg’s Nutritional Yeast Flakes. Nutritional yeast is loaded to B vitamins, and also has some protein in it. I has really unique, almost cheesy flavor…it’s SO freakin good! I like to add a lot to give it more a cheesy taste. Stir in really well to get the flakes on all the kale. Whn the kale is done cooking, add in 1-1/2 tbsp of hemp seeds. I use raw hemp seeds, the Navitas brans. Hemp seeds are light, have a great taste, add a little more protein and fiber, and is a great source of good fat.

Stir everything in together. You can enjoy it hot, fresh out the pan, or enjoy the leftovers as a kale salad.
